WThis is an easy take on a beverage found on our latest cocktail list. It's a party-sized premix which is bursting with the tastes of the Christmas time, making it excellent for your holiday party. Reserve the remaining cordial for brunch beverages, puddings, or to mix another batch of bikinis.

The Bikini Cocktail

Serves 10 guests

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Drink (makes 850ml, enough for 10)

400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Place the listed components in a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, take off the stove and leave to reach room temperature fully. Pour to a sealable bottle, close it and refrigerate it in the fridge, where it will keep for about four weeks.

Preparing the Premix: Mix every spirits and syrup into a big jug, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, making it fully clarified.

To serve: Add 85ml of the premix into your stirring glass filled with ice, gently stirring gently for a minute to chill. Filter to a cold coupe glass or equivalent, top with the cranberries adding the final touch using a quick spritz with the mandarin essence over the top.
